turns into the best pancakes ever!
Sweet Potato Pancakes
2/3 cup cooked and mashed sweet potato
2 tlbs. oil or melted and cooled butter
1 cup coconut milk (or regular milk)
1 lg. egg 1 cup gluten free flour (or regular flour)
1 tsp. baking powder
2 tlbs. sugar
1/2 tsp. cinn.
1/2 tsp. salt
Gently add dry into wet...whisk until smooth.
Drop blueberries on top...pour onto a non~stick griddle and ...
ENJOY!!
(we love ours served with warm applesauce or blueberry syrup!) :)

You are right, these are delicious. I added huckleberries to ours and they were delicious. Glad I tried them!!
