A few years ago, my sweet friend, Cherie, whom I work with...
kinda :) got me into the wonderful habit of Peppermint Bark :)
I happened to mention to my dear Aunt Shirley
how much I was loving it,
and she said,
she has the B E S T recipe EVAH for it!!!
And the past couple of years I have heard the delightful stories of how her and my darling cousin Katie ...
"We have our Peppermint Bark all made!!"
Well, of course I copied down the recipe....
but sadly have waited till this year to TRY IT!!!!!!!!!!!
And.Oh.My!!!!
It is a winner for sure!!!
So...
I know everyone has their baking all done...
but here is the recipe for next year!! :)
Peppermint Bark
6 oz. red candy cane crush~~~or 30 hard candies~~ chopped fine
1 package Ghirardelli White Chocolate Chips
Melt in metal bowl over barely simmering water~make sure water does not touch bowl~110*~melted and smooth
Cover a large baking sheet bottome side up with foil
Mark a 12x9 inch rectangle with pencil
Pour the white melted chocolate onto foil~will be thin~use spatula
Sprinkle with 1/4 cup crush
Chill in regrigerator 20 minutes.
Stir together in a heavy medium saucepan over medium low until melted and smooth:
1 package bittersweet Ghirardelli Chocolate Chips
6 Tbls. whipping cream
3/4 tsp. peppermint extract
Cool to lukewarm,5 minutes.
Make sure cool enough. Spread with spatula.
Refrigerate 25 minutes.
Melt another package of Ghirardelli White Chocolate Chips to 110*.
Work quickly to spread to cover.
Immediately sprinkle with remaining crush.
Chill 20 min.
Lift foil to cutting board.
Turn edges and cut bark into 2inch strips.
Cut each strip into small triangles.
Can be made 2 weeks ahead. Store in airtight container in refrigerator.
