For many years I have been staying off of all gluten...and after the first of the year decided to try 30 days with NO GRAINS AT ALL!
I battle "foggy thinking", and thought it just might not hurt to stay off of all grains for a while.
Well....I do believe that it helped...and....

Maybe you have spotted the new Against All Grain cook book at Costco lately, by Danielle Walker.
I have enjoyed her blog...I haven't purchased the cookbook yet...I have too many cookbooks, but I have been seriously thinking about it! :)
Anyway, her story is a wonderful story of recovering her health, and she found out that grains were the problem!
Thought you would enjoy her wonderful recipe...she calls them the...
Real Deal Chocolate Chip Cookies :)
1/2 cup palm shortening or butter
1/2 cup coconut palm sugar
4 tlbs. honey
2 large eggs
4 tsp. vanilla
3 cups blanched almond flour
4 tlbs. coconut flour
1 tsp. soda
1 tsp. sea salt
1 cup Enjoy Life chocolate chips or... 1/2 cup each chocolate pieces and chips
Mix. Refrigerate for at least an hour.
Use a small ice-cream scoop and drop those wonderful cookies on parchment lined cookie sheets. Bake at 375 for 8 min.
Cool on a wire rack
I must put a warning on here...
you will want to eat them ALL!! :)
....and oh how I wish my sweet little neighbor Polly, still lived across the street...she always enjoyed a little plate of cookies. She moved to be closer to her daughter...she was my neighborhood "cookie partner"....she is missed!
